Ingredients ABC

Anis
Seeds of the anise plant. Give! to buy it whole or ground. Anise is a classic ingredient in Christmas baking. It tastes sweet and spicy, reminiscent of liquorice. Anise has a strong flavor, therefore use it carefully. Always buy and use anise fresh.

ginger
Rootstock of a Southeast Asian perennial. Is available fresh as a root, ground in powder form and candied, also with chocolate coating. Ginger tastes sweet and hot. For cookies we mostly use it in powder form and candied.

Candy fruits
Fruits boiled down with sugar, z.B. Lemon peel. Orangeat, also candied cherries, Dates and ginger. Citron is made from the zest of the cedar lemon, Orange peel made from the peel of bitter orange or bitter orange. The peels are boiled in sugar syrup and then dried. cardamom
The fruit capsules of the cardamom bush contain the seeds, which are then ground as a typical Christmas seasoning for gingerbread and speculoos. They taste strong and spicy. Like all spices with essential oils, only buy them in small quantities. Along with saffron and vanilla, cardamom is the most expensive spice.

coriander
Coriander seeds. which one quite, can buy crushed and ground. Coriander is very aromatic and tastes sweet and spicy. It is used as a seasoning for certain types of bread, for pastries, fish, Liqueurs and in Asian cuisine.

Couverture

Marzipan paste

Muskat

Pistachios
