ENVELOPE MELTING
1 Roughly chop the couverture. Put two thirds of it in a bowl.
2 Place the bowl in a hot water bath and stir the couverture occasionally. Do not let water splash into it, otherwise it will become lumpy.
3 Take the bowl out of the water bath. Add the rest of the couverture and melt while stirring.
4 Let the couverture leftovers set. Melt in a hot water bath if necessary.
