Celery Nut Cream
ingredients for 4 people:
80 g walnut kernels
1 Piece of celery bulb (about 150 g)
1 Tablespoon lemon juice
200 g Mascarpone, alternatively double cream cheese
sea-salt
White pepper, freshly ground
For garnish:
½ bunch of parsley
some half walnuts

Preparation time: about 15 Minutes
1. Finely grind the walnuts and toast them in a dry pan over medium heat, until they start to smell. Let the nuts cool on a plate, otherwise they will brown in the hot pan.
2. Peel the celery bulb, Grate finely and immediately drizzle with the lemon juice, so that it stays white.
3. Mix the mascarpone with the ground walnuts and the celery grated. Season the spread with sea salt and pepper to taste.
4. Wash the parsley, Pan dry and divide into small bunches. Serve the celery and nut cream garnished with the parsley bunches and walnuts. The cream goes well with wholemeal rolls or wholemeal toast.
