Tomato spread with basil

ingredients for 4 people:

2 large ripe tomatoes (about 300 g)

50 g black olives

1 Bunch of fresh basil

4 Eßl. Sour cream

1 clove of garlic

sea-salt

White pepper, freshly ground

Preparation time: about 15 Minutes

1. Scald the tomatoes with boiling water, let it steep briefly, put off cold, skin and cut in half. Remove the green stalks and seeds from the tomato halves and cut into very small cubes.

2. Drain the olives, stone and finely chop. Wash the basil and toss to dry. Pluck the basil leaves from the branches and cut very finely.

3. The diced tomatoes, Mix the olive pieces and the cut basil with the creme froiche in a bowl.

4. Press the garlic clove through the press. Season the tomato spread with sea salt and pepper to taste. It goes well with strong wholemeal bread.
